Slicing
Thinly cold-sliced with a slicing machine and hand packed. Different packs in an order may come from different pieces and batches.
Processing
Pork loin sausage is made with the iliospinal muscle of 5J purebred Iberian pigs reared on the open range in the woodlands of Spain on a diet of acorns during the montanera.
Processing starts with the removal of outer fat, aponeuroses and tendons. The meat is then salted, marinated in paprika and spices, stuffed into a natural colon casing and aged.
Ingredients: Pork loin from bellota-grade purebred Iberian pigs, salt, paprika, spices and authorised preservatives.
Production
Iberian pigs reared on the open range.
Enjoying your lomo
To completely enjoy its flavor, remove it from the plastic pack 20 minutes prior to consumption.
Once vacuum is lost, remove the lomo from the plastic pack.
Keep between 0 ºC and 5 ºC (32 ºF to 41 ºF).
