Shoulder cut from purebred Iberian pigs reared on the open range in Extremadura on a diet of acorns during the fattening period, when they add at least 37% of their original weight. A purebred Iberian pig comes from parents of 100% Iberian bloodstock (not cross-bred) and accounts for less than 5% of the country's Iberian pigs.
In the delicate processing and curing phase, Cárnicas Maldonado keeps the travel time to the slaughterhouse at a minimum and lets the animals rest to prevent stress, which can alter Ph levels.
A minimum of salt is used for preservation to ensure first-rate flavour.
After eight months in natural drying houses the hams go to the cellars, where they will age for 12 months.
Ingredients: Shoulder cut ham from bellota-grade purebred Iberian pigs, salt. No preservatives.
Cutting reveals a rosy-to-purplish-red colour with glossy streaks of marbling fat in the flesh. Very slightly salty. Full-bodied, intense aromas, highly nuanced. Subtle, delicate flavour.
Outer appearance
A medium-size shoulder, with a thin shank and black hoof. The outer side is covered with a thick layer of glossy fat. The inner side shows traces of white or bluish-grey fungal growth, an unmistakable feature of slow ageing in the cellar.

Adquirí una paletilla maldonado bellota ya que en dos ocasiones había tenído la oportunidad de provar esta, y probar el jamón "maldonado", y lo cierto es que sin estar mala, tampoco le pondría un 10, no os dije nada porqué no era mala, ni estaba en mal estado, pero no llegaba a la calidad que esperaba de un Maldonado.
