Producer
Maldonado
Processing
Shoulder cut from purebred Iberian pigs reared on the open range in Extremadura on a diet of acorns during the fattening period, when they add at least 37% of their original weight. A purebred Iberian pig comes from parents of 100% Iberian bloodstock (not cross-bred) and accounts for less than 5% of the country's Iberian pigs.
In the delicate processing and curing phase, Cárnicas Maldonado keeps the travel time to the slaughterhouse at a minimum and lets the animals rest to prevent stress, which can alter Ph levels.
A minimum of salt is used for preservation to ensure first-rate flavour.
After eight months in natural drying houses the hams go to the cellars, where they will age for 12 months.
Ingredients: Shoulder cut ham from bellota-grade purebred Iberian pigs, salt. No preservatives.
Production
Purebreed iberian pigs reared on the open range.
Taste note
Cutting reveals a rosy-to-purplish-red colour with glossy streaks of marbling fat in the flesh. Very slightly salty. Full-bodied, intense aromas, highly nuanced. Subtle, delicate flavour.
Outer appearance
A medium-size shoulder, with a thin shank and black hoof. The outer side is covered with a thick layer of glossy fat. The inner side shows traces of white or bluish-grey fungal growth, an unmistakable feature of slow ageing in the cellar.
Enjoying your paletilla
We recommend eating your paletilla within 6 months after delivery.

The fat marbling across the meat was rancid and ruined the flavour of the product. It left a bad aftertaste in the mouth.

3 stars Did not reach the expected quality, February 11, 2010
Joan N. (Mataró, Barcelona) Has purchased this product

I purchased an acorn as maldonado shoulder twice had the opportunity to provide this, and try the ham "Maldonado", and the truth is that without being bad, neither would put a 10, does not say anything because I was not bad, or was in bad shape, but did not reach the quality expected from a Maldonado.

5 stars A real discovery, November 10, 2008
Juanjo A. (Villanañe, Alava) Has purchased this product

My family has been a real discovery. I am not a Espert in ham and a connoisseur of the production process of the hams, etc., but the products we have tested Maldonado has been a real treat (especially the spine). The shoulder was very good, and after the last incident with the shoulder Joselito, we might focus on Maldonado.

How to slice a spanish cured shoulder

The slicing of a ham with a knife is part of the genuine, quality Iberico ham tasting experience. It is a simple process too, with the right equipment. Nevertheless, certain safety measures should be observed.

  • Use a holder designed for this purpose, to keep the shoulder firmly in place.
  • When slicing, the hand not holding the knife should always be higher than the hand holding the knife.
  • Keep your body at a safe distance from the cutting area.
  • Slice slowly, without applying too much force.
