    Gold Medal winner in 2006 and 2007 in the World Cheese Awards in the United Kingdom. The panel of judges for this event is made up of 120 specialists from the UK Cheese Guild's publishing house, who are known as the "Nobel prize-winners of cheese". Their job is to evaluate the more than 1,000 cheeses presented from around the world.
    An artisanal cheese made with raw milk from carefully selected sheep of the Castilian breed, descended from the Zamora variety. Low-acidity milk with high fat content.
    This compact cheese is aged for two months in a cold chamber at a temperature of 10º C and then spends four months in a cold, humid underground cellar.
    Taste note
    • Outer appearance: Hard, waxy yellow to brownish rind.
    • Inner appearance: Semi-matte yellowish ivory color. A few small holes scattered throughout the cheese.
    • Texture: Firm, compact and somewhat stretchy.
    • Taste and aroma: Slightly acid aroma reminiscent of sheep's milk, with notes of butter and nuts. It leaves a pleasant oily sensation in the mouth. It has a slight tang that gradually becomes noticeable. The taste and aroma persist for a long time.

    Storing and enjoying your cheese
    Tips for savoring all the aroma and flavor of this cheese:
    1. Keep it in a cool, dry place between 2º and 8º C (you can use the lower part of your refrigerator).
    2. Serve it at room temperature.
    3. After cutting the cheese, store it immediately in the refrigerator in a hermetically sealed plastic container along with a piece of dry bread. The bread will absorb moisture and protect the cheese from mold and excessive drying. Replace the bread when it is covered with mold.
