Bellota Top quality: pig fed exclusively on acorns (more)
Curing
From 26 to 36 months.
Origin
Extremadura

Hind leg
Hog cuts: ham
Producer
Maldonado
Processing
Ham from purebred Iberian pigs reared on the open range in Extremadura on a diet of acorns during the fattening period, when they add at least 37% of their original weight. A purebred Iberian pig comes from parents of 100% Iberian bloodstock (not cross-bred) and accounts for less than 5% of the country's Iberian pigs.
In the delicate processing and curing phase, Cárnicas Maldonado keeps the travel time to the slaughterhouse at a minimum and lets the animals rest to prevent stress, which can alter Ph levels.
A minimum of salt is used for preservation to ensure first-rate flavour.
After eight months in natural drying houses the hams go to the cellars, where they will age for 18 months.
Ingredients: Ham from bellota-grade purebred Iberian pigs, salt. No preservatives.
Production
Purebreed Iberian pigs reared on the open range.
Taste note
Cutting reveals a rosy-to-purplish-red colour with glossy streaks of marbling fat in the flesh. Very slightly salty. Full-bodied, intense aromas, highly nuanced. Subtle, delicate flavour.
Outer appearance
A slender hind leg with a long, thin shank and black hoof. The outer side shows the typical V shape known as the Serrano cut, and is covered with a thick layer of glossy fat. The inner side shows traces of white or bluish-grey fungal growth, an unmistakable feature of slow ageing in the cellar.
Enjoying your jamon
We recommend eating your jamón within 6 months after delivery.

4 stars Excellent taste, abundant adipose, April 15, 2010
Myriam M. (Castellón, España) Has purchased this product

Since we are on our second Maldonados. Both have had excellent flavor and distinctive, although the fat seemed denser than in the 5J. The first was balanced as a whole, but with slightly too much fat. The second is just the opposite, the ham comes out almost from the first cut.

I shall gladly reply to your request for opinion, and I've been very pleased with the purchase made. The ham, bought to enjoy it with my family during the holiday season is Very good and I appreciate the advice received from you. He had all the expected qualities: sweet and flavorful, fat and flesh firm but exquisite tenderness. No doubt that I will gain another ham home.

How to slice a spanish cured ham

The slicing of a ham with a knife is part of the genuine, quality Iberico ham tasting experience. It is a simple process too, with the right equipment. Nevertheless, certain safety measures should be observed.

  • Use a holder designed for this purpose, to keep the ham firmly in place.
  • When slicing, the hand not holding the knife should always be higher than the hand holding the knife.
  • Keep your body at a safe distance from the cutting area.
  • Slice slowly, without applying too much force.
